More modern, so to speak, is the production at Azienda Agricola Caven.
During the ageing process, the wines are also matured in 450–500-litre oak barrels (tonneaux); however, at the heart of it all lies a company philosophy rooted in respect for tradition, meaning that whilst small barrels are used, this is done without altering the characteristics of the indigenous grape variety grown in Valtellina.
The Nera family therefore stands out not only for its promotion of Nebbiolo, but also for its social commitment and dedication to safeguarding the local area, supporting the winegrowers who supply them by purchasing their grapes, assisting them through the various crucial pre- and post-harvest stages, and striving to preserve the stunning terraced landscape bequeathed to us by our ancestors.
