It is one of the most important white grape varieties in the world. Originating in Burgundy, it is now cultivated worldwide.
It is characterised by an incredible variety of aromatic components, which manifest themselves in different ways depending on the soils and climates where it is grown. By limiting yields per hectare to between 70 and 80 quintals, it is possible to produce distinguished, well-structured wines. The only weakness of this grape variety is its early budding, which can expose the buds to the risk of spring frosts.
This grape variety has excellent ageing potential and is used in the blends of the world’s most famous sparkling wines, such as Champagne, Trentodoc and Franciacorta, as well as in sparkling wines produced in the New World (California, Australia and New Zealand).
