  VARIETY: OBTAINED EXCLUSIVELY FROM THE VITIGNO NEBBIOLO GRAPE, LOCALLY CALLED CHIAVENNASCA.

PRODUCTIVITY: ABOUT 60 QUINTALS PER HECTARE (SELECTING THE FINEST GRAPE TO BE DRIED)

YIELD IN WINE: 50%

MAPS: SONDRIO, MOUNTAIN AND TEGLIO. LYING EAST TO WEST ON THE RHAETIC SLOPES WITH EXPOSURE TO THE SOUTH

VINEYARD: OPTIMAL POSITION BETWEEN 400 AND 500 M. ABOVE SEA LEVEL

SOIL: POROUS SANDY STRATUM, PERMEABLE TO WATER, SLIGHTLY HUMUS, MODERATELY DEEP, ABUNDANT MINERALS

WINE PROCEDURE: GRAPES DRIED AND PRESSED TOWARDS THE MIDDLE OF FEBRUARY, FERMENTATION UNDER SUBMERGED HOOD, WITH MACERATION ON SKINS FOR 15-20 DAYS AT A CONTROLLED TEMPERATURE.

AGING: FOR DISCIPLINARY DISPENSATION OF THE PRODUCTION THE MINIMUM AGING PERIOD IS 16 MONTHS. DEPENDING ON SUITABILITY THIS WINE, IN PARTICULAR, CAN PASS INTERVALS OF A YEAR OR MORE IN LARGE OAK BARRELS.
WITH THE AIM TO REFINE ITS MERITS IN THE BEST POSSIBLE WAY IT MUST AGE FOR AT LEAST TWO YEARS, ONE OF WHICH IN WOODEN BARRELS

ORGANOLEPTIC CHARACTERISTICS: RUBY RED COLOUR TENDING TOWARDS GARNET WITH AGING, INTENSE BOUQUET WITH HINT OF VIOLET, DRY AND AUSTERE TASTE WITH THE AROMA OF DRIED GRAPE.
