Chardonnay
Chardonnay is a white variety originally
from the famous Chardonnay area in Burgundy.
It is a vigorous variety with a high yield
which in our vineyard, however, we contain
by short pruning using the Guyot method. It
is sensitive to Spring frosts. The
harvesting time must be perfect as it tends
very quickly to lose, after maturation point,
its acid component.
