Cabernet-sauvignon is a variety originating in the Médoc and Graves areas of the Bordeaux, and is, without a doubt, the world’s best known variety for the production of high class and long-lasting wines. It has a huge capacity to adapt to the most desperate climatic conditions and vinification techniques, by maintaining its recognizability characteristics even when totally exposed to those of “terroir”. It is capable of producing wines already intense in colour, rich in tannins, aromatic substances and capable of long maturation. Thanks to the huge structure of this variety one can dare to entrust it to lengthy macerations and refining in wood, especially in French Oak, which allows the wine to express, in time, a composite and fascinating bouquet.
